Canning later this week. Chuck roast. It’s been on sale. Cut most of
the fat off cut into cubes, stuff into qt. Jars and pressure cook in its
own juices. Good protein to have on the shelf.

Cool. That's what I'd call serious canning.

Had always watched Mother, Grandmother and aunt do the canning, usually fruit. I did not look forward to fig season!
Did my first canning a couple months ago when we had an overabundance of blackberries--so many that we urged people to Please! come and pick. My blackberry jelly turned out beautifully, if I might brag for a bit.

I have a dehydrator that has been put to good use when veggies are on sale in season. Saves room in the freezer.

Had to make room for my canned beef somewhere in this small
home that I’m very thankful to have. 😜

Good idea, we use to buy our beef every fall to put in the freezer....then come the following year we would can it and buy fresh, and use the canned stuff for fast evening meals during the week...like stew. But it's really hard to find beef we bought back then, with swiss steak sold in the stores for 79 cents an pound. Mostly grass fed and
no contanment chemicals/feed in the meat from raising it. Back in those days either swiss steak made with campbells condensed tomato soup or pepper steak was at least an once an week dinner.,.with mashed potatoes and
other side dishes...lots of times coleslaw and/or green beans. Progess see's us pay the price I guess.
