Yes those yellow flowers are coming up this time of the year. Instead of spraying with some 'cide' eat them and their greens, dandelion I am talking about.
The greens are great in salads or sautéed in your favorite oil to complement what else will be on your plate.
The flowers, pick them just below the flower head then wash then put in your favorite batter and fry. Today I used a organic cornmeal batter along with a little salt and pepper and a few spices of my choice and fried up a couple dozen. They are nice afternoon snacks or to complement a meal as a side dish.
The roots can be dried and make a reasonable coffee substitute when roasted and ground.
Of course never pick near roadsides or where you suspect they were sprayed.

Chef Emeril Le gasse has an dandilion receipe,,,where you use fried bacon over the greens, add your dressing and toss on an lightly poached egg on top of this salad that sure look good to eat also. (food network)

When I was growing up in the mountains of WVA we never thought of them as weeds ever....rather enjoyed them and the bees.

So Eve, you are an Appalachian ridge runner as am I. On the east side of the mountains so I have the opposite leg shorter from ridge running. . ha. .ha.
Great link you attached with lots of good information. Heading out again to pick some open flowers to batter for an afternoon treat.
We're cloudy and 54 now so just right for picking flowers. I got the leaves this morning to get the most energy. Several pounds of root will be dug, dried then roasted and ground for coffee enhancer.

one of my friends makes fantastic dandelion wine...it is such a treat! Dandelions are also thought to heal the soil as the roots bring up calcium from what I read years ago...I wonder if Hawkweed would have the same benefits?
